mozaic was another successful recommendation from a friend. chef chris salans brings fine dining, impeccable service and an outstanding bar menu to bali. through a choice of four 6-course tasting menus diners get to experience mozaic’s commitment to fresh produce, creative, french and balinese cuisine.
we were greeted in the lounge before being seated at our table. we started with perfectly made dirty martinis and a canape, compliments of the chef: parmesan puff pastry with liquid truffle crem (i wanted about ten). our table was spaciously set in the restaurant’s gorgeous tropical garden.
the gf and i each chose a different tasting menu with wine pairing, which include canape, amuse bouche and end of meal truffle, so really its more like an nine course meal. the gf ordered the vegetarian menu, modified to include some fish, and i got the discovery menu. one of the bonuses is that you can let them know any dietary specifications and they’ll customize dishes to fit your needs. before your meal begins they bring out a long dish with fresh herbs or spices, each of which corresponds to one of the dishes and serves as your flavor guide. you’re encouraged to touch, taste and smell as you go through your meal. it was a unique touch that definitely won me over.
overall all the food was really incredible and very well timed. the only course we didn’t like happened to be both of our third courses. we honestly could have done without them to save room for the amazing dishes that came before and after. i would definitely come back and refer friends.
the meal, service and experience were amazing. only downside, our reservation was at 9pm, which is way too late to start that big of a meal. the trick is to book a reservation more in advance to get seated earlier.
