raw dinner.

briana stockton, a friend, raw chef and ass-kicking personal trainer made us all dinner the other night: completely raw.

my favorite dish was definitely the shredded zucchini pasta with pesto, sundried tomato, grape tomatoes, broccoli, mushrooms, and goat cheese. i could easily eat this anytime.

we also had nachos and tacos: cabbage triangles or lettuce cups loaded with ground almonds, cumin and chili powder (the meat substitute/protein), “cheese” made from ground cashews, water and red bell pepper, garlic and himalayan salt , tomatoes, shredded lettuce, jalapenos, avocado, cilantro, onion, and “sour cream” made from ground cashews, water and lemon juice with a bit of himalayan salt.

i’m a shameless carnivore and lover of all foods warm and comforting yet felt satisfied after dinner and thoroughly enjoyed it. more raw food fun to come!
